The Pie Project: Pies from the Movie "Waitress"

A couple weeks ago, I was on Twitter and saw a tweet from Sandie at Inn Cuisine about the movie "Waitress". She had shared a tweet from Donal who writes the Good Mood Food Blog that had a link to recipes for the pies made in the movie. Then, I got a message from Sandie later in the day suggesting since there were 5 pies on the link and 5 of us all seemed to think they sounded yummy we should come together to do a Pie Project! We all selected one pie and are sharing our results today! At the end of this post you will find all of the links to their blogs so you can see what they made.


If you haven't seen the movie, you may not understand why the pies are so important. You see, Jenna, the main character, creates new pies throughout the movie that encompass what she is feeling. Jenna is in a miserable marriage to a controlling man, and finds out she's pregnant. She's very upset about this news as she just wants to save up some money and get away and open her own pie shop. This is actually a cute movie with Keri Russell (you might remember her from Felicity) that is worth renting.

The pie I made was called " Baby Screamin' Its Head Off In The Middle of the Night & Ruinin' My Life". This recipe was really a cheesecake and not so much a pie. Which is fine as I do enjoy a nice, creamy cheesecake. This was the first one I've made in quite a few years, and the first one I actually used a water bath during the baking. I must tell you that the water bath is KEY to keeping it from cracking on the top. My only issue with this "pie" was that the baking time really should have been longer than the 70 minutes as I had a problem with the bottom half of the "pie" not quite setting up firm enough.

The cheesecake was a simple one, with a touch of amaretto flavor. I think I would have preferred that it be stronger, perhaps some almond extract would have added that extra dimension I was looking for in this recipe.

Now this recipe is not for the faint of heart or anyone watching what they are eating... unless you can follow the advice I learned at Weight Watchers... 3 bites! 1st one is for that first fabulous taste, 2nd one is just as good as the first, 3rd one isn't any better or worse and by then the flavor craving is satisfied.

What's For Dinner Wednedays: Beef Bourguinonne & Giveaway!!

We are in the last week of the What's For Dinner Wednesdays challenge! This week's recipe lends itself perfectly to cooler weather and the desire for comfort food - Beef Bourguinonne (recipe can be found HERE).

With today being rainy and one of those days when it's best if you just stay home and putter around, this week's recipe was ideal. Of course, as soon as I heard what the recipe was I couldn't help but think of Julia Child! I must say that after seeing Julie & Julia back in August, I really do admire her for her ability to keep searching for the one thing that would make her happiest. She shared so much of herself in her first cookbook, Mastering the Art of French Cooking. In this day and age, not many people really cook that way anymore - a pound of butter, making aspic, etc. But, it is a fascinating book to read through.

Now just because you may not be familiar with French cooking, doesn't mean you haven't ever tasted or made your own version of Beef Bourguinonne. That's because it is really a beef stew. No potatoes in this recipe, but still a stew when it comes down to it. The length of cooking allows the meat to become fork-tender and if you use a good red wine (at least one you would drink), the flavor will come through wonderfully after the lengthy cooking time.

I served it over egg noodles which seems to be the ideal way to enjoy this type of dish. It's cool-weather comfort food and anyone who cooks should give it a try.

Giveaway Winner & A Rich, Dreamy Brownie

I know I've been a bad food blogger lately. But, I hope to make it up to you today by sharing an amazing (and I really do mean AMAZING) brownie recipe!! Next week promises to be a bit better for my schedule and cooking, so along with new recipes and another giveaway. So, I think I've got you covered!

Today our PTA threw a luncheon for this year's Room Parents. Even though my schedule doesn't allow me to be a Room Parent, I wanted to contribute a treat as a 'thank you' for all of the party planning they will be doing this year. Initially, I had chosen a Cheesecake Brownie, but since my time was more limited than I thought it was going to be I had to choose another one. Luckily, I had pulled out favorite cookbook that hasn't gotten much use lately, Rosie's Bakery Chocolate-Packed Jam-Filled Butter-Rich No-Holds-Barred Cookie Book. I've had it for quite awhile, and from a quick look over at Amazon you can get it for a steal!

I ended up making Rosie's "My New Brownie" recipe, but I dressed it up a little bit. I added some Heathy toffee bits to the batter. Once they were finished baking, I quickly topped them with some Caramel Marshmallows that I sliced in half so that they could melt and be spread over the top to ice the brownies.

The marshmallows were sent to me from Plush Puffs Marshmallows and I must say they are a wonderful surprise to bite into! The caramel was well distributed in what was probably the freshest marshmallow ever. That says a lot since I've had them for a couple of weeks already and they were still perfectly soft and they are made completely from natural ingredients. They have several varieties and they go equally well in a cup of hot cocoa (still to warm to truly test that one out, but I'm betting the peppermint marshmallows will be amazing in cocoa) as well as a more grown-up s'more. Forgive the photo, but I had to take it quickly this morning as I was dropping these amazing brownies off for a friend to take them to the school for me. I did keep a couple so that we could taste test them tonight. My Oldest pretty much INHALED the brownie without a second thought becase "it was so good I couldn't stop eating it!". My youngest loved it, but couldn't finish it - I think because it is a rich brownie. I must say that these are my new favorite homemade brownie. They encompass everything I feel a brownie should be - rich, dense and fudgey. The melted marshmallows added that extra bit of "something" that would have been missing. You could use any type of marshmallow you happen to have, but if you can get your hands on some from Plush Puffs you won't be disappointed!

Rich and Dreamy Brownies

Adapated from: Rosie's Bakery Chocolate-Packed Jam Filled Butter-Rich No-Holds-Barred Cookie Book

Ingredients
6 ounces unsweetened chocolate
1 cup unsalted butter
2 cups sugar
1 teaspoon pure vanilla extract
4 large eggs
1 cup all-purpose flour
3/4 cup Heath toffee bits
8-10 caramel marshmallows, sliced in half (or any flavor you like)

Directions

Preheat oven to 350 degrees. Line a 9-inch square baking pan with parchment paper.

Melt chocolate and butter in a double boiler over simmering water. Remove from heat and allow to cool for a few minutes.

Add sugar to a large mixing bowl and pour in chocolate mixture. Set your electric mixer to medium speed and mix until fully blended. Scrap the sides of the bowl and mix again to make sure everything is incorporated.

Add the vanilla. While the mixer is on low speed, add the eggs one at a time. Blend well after each addition. Scrape the sides of the bowl and blend until the mixture looks velvety.

Add the flour on low speed and mix for about 15-20 seconds. Add the toffee bits, the pour into prepared pan after they are thoroughly mixed into the batter.

Bake for 35-40 minutes or until a toothpick inserted in the center comes out with moist crumbs. Add the marshmallows to the top of the brownies and wait 2-3 minutes while they begin to melt. Then, spread them so that they smoothly ice the brownies. Allow to chill in the refrigerator for a couple of hours (or overnight) before cutting with a sharp knife.

What's For Dinner Wednesdays: Beef Pot Roast

Again, I apologize for the sporadic posts this week! We've had something going on every night between soccer practice and Back to School Night. I hope to get some cooking in this weekend so next week you'll have some great new recipes to read about.

For this week's What's For Dinner Wednesdays recipe, the selection was Beef Pot Roast with Maple Sweet Potatoes (recipe can be found HERE). The recipe really uses the fall seasonal ingredients by incorporating sweet potatoes with the roast. It's a simple recipe, and if you are a fan of pot roast, I am sure you will love this recipe.

Strawberry Muffins & a Special Giveaway

First, I want to welcome my new readers! I've noticed that there has been an increase in subscriptions to my little 'ole blog, and want to welcome each and every one of you! My posting has been a little off the last week because we are still getting accustomed to our new routine with the start of school. I'm hoping to be a bit better this week, and if you read to the end you'll find out about a cool giveaway for this week.

This past weekend was Rosh Hashanah (the Jewish New Year), so we spent part of the weekend with My In-laws as we have been going to their temple for the holidays for quite a few years now. After the day in temple, we have dinner together to bring in the new year. Our traditional meal includes Chicken in Phyllo Dough (you can find the recipe HERE).

Our dessert was an assortment of different things. Baked prune plums were served over ice cream (simply delicious!), coffee cake and a bowl of fresh strawberries and cantaloupe. Since My mother-in-law bought the big container of strawberries, I was the lucky recipient of the rest of the container when we left to go home.

Figuring I needed to get started using them beyond just prepping them to eat, I decided to search for a Strawberry Muffin recipe. I ended up making some adjustments to a Cooking Light recipe for Cranberry-Orange Muffins and I think they turned out perfectly!

For a low-fat muffin, they turned out perfectly moist and not a smidge dry at all. I left out the orange rind and subbed in 2 cups of coarsely chopped strawberries for the cranberries. I didn't think the sprinkling of sugar over the tope of each muffin really added anything, so I don't think I would bother with it next time.

Now, for the giveaway news! As you may (or may not) know, October is Breast Cancer Awareness Month. Most people have been touched if not directly within their own family, perhaps someone they know by this disease. What's For Dinner Wednedays: East Meets West Burgers

When I was growing up, the barbeque grill was primarily My Dad's domain. We would have Sunday dinner every weekend, and during the summer the grill was used quite a lot. My job was usually to brush on barbeque sauce onto whatever meat was cooking over the hot coals. When I got married and we got a grill, but I shied away from it for a long time. That is until I learned how to use the grill, then there was no holding me back.

This week's Beef. It's What's For Dinner Wednesday recipe is East Meets West Burgers (recipe can be found HERE). I tend to avoid grilling burgers for some reason, so this was actually the first time I grilled burgers myself. My Husband was working a bit late, so I couldn't just ask him to do it for me. I followed the cooking time and temp information on the recipe and they came out perfectly.

Something to note about this recipe is that the burger itself is rather basic. Just ground beef combined with bread crumbs, egg white, salt and pepper. You could use whatever you like for the burger itself, it's the toppings that bring the East Meets West flavor to this burger.

The Asian flavored mayo was tasty and should be made in advance so that the flavors have time to marry together. I allowed the mayo to hang out in the fridge for about an hour or so before I began grilling the burgers. I liked the crisp crunch of the slaw and did make a change to the recipe as it is shown on the Beef website - I used 1 teaspoon vegetable oil and 1 teaspoon dark sesame oil. I liked the addition of the sesame oil and the deeper flavor it brought to the slaw.

Overall, these burgers were easy to prepare for a weeknight meal. I am now more comfortable grilling burgers after trying this recipe and think that there are so many fun toppings and sauces you could add to a "regular" burger to make it more interesting.

Frozen Caramel-Toffee Ice Cream Sandwich Dessert (and Giveaway Winner!)

I'm a bit late in posting about the dessert I took to our Labor Day get-together. And, if it wasn't such a huge hit and truly decadent dessert I might have just let it go. But, once you have tried this dessert, it will be a favorite for large summer get-togethers!

Back in August when Recipegirl returned from her fabulous beach vacation, she posted the recipe for Frozen Toffee-Caramel Ice Cream Sandwich Dessert. I was in love at first sight! With caramal, chocolate and toffee how could I resist it?

Now, this dessert looks very labor-intensive, and you can even tell your friends the hours it took to create this masterpiece. In reality, it's a snap to put together and I even had my 7 year old do the 2nd layer almost all by himself. Take the compliments and enjoy every last decadent bite! It makes a huge amount, so be sure to share with all of your friends and neighbors - they will adore you after just one bite!

Beef. It's What's For Dinner Wednesdays. (Southwestern Steak Salad)

I was recently asked if I would like to join a group of fabulous food bloggers (read to the end for their links to see what they came up with for this week) who would be helping promote the Beef. So, I got the first recipe just 2 days ago and had already done my shopping for the week. As luck would have it, we had some leftover London broil from the weekend. My seasoning was a bit mild in comparison since I had served it to friends and wasn't sure if they would like spice.

To make my steak salad more Southwestern, I decided to use what was in my refrigerator for inspiration. This is what I had for dinner tonight:

For starters, I used Romaine lettuce and fresh corn. The steak would be perfect with a Gorgonzola or other bleu cheese as suggested in the original recipe, but I was all out so I used a combination of shredded cheddar and Monterrey Jack cheeses. For the dressing, I combined a tablespoon each of guacamole and medium salsa with 2 tablespoons of Ranch dressing. For a bit of crunch, I added some slivered almonds.

This was a fantastic weeknight salad! A bonus was that I was able to use leftovers from another meal to come up with something filling and tasty. Next week's recipe has already been posted and I'm really looking forward to trying it: East Meets West Burgers! YUM!

Green Beans & Cherry Tomatoes from Gastrokid Cookbook (GIVEAWAY!)

I am so excited to tell you that I am hosting a giveaway for the fabulous cookbook, The Gastrokid Cookbook: Feeding a Foodie Family in a Fast-Food World! Read through to the end of this post for details on how to enter my giveaway!

Tonight, I decided to try another recipe from the Gastrokid Cookbook in honor of this giveaway. I had picked up some French green beans last weekend from Costco and some beautiful grape tomatoes from the farmer's market. So, the obvious choice was to make Green Beans & Cherry Tomatoes.

This was another simple recipe that I won't need a recipe to make again. The ingredients are simple: green beans, cherry tomatoes, olive oil, and lemon juice. This is a wonderful way to enjoy fresh green beans this time of year. They maintain their crisp crunch by blanching them for just a few minutes. Once that is done, toss them with the halved cherry tomatoes and drizzle a bit of olive oil over the top and finish with a squeeze of lemon juice.



This is such a gorgeous side dish, it would be a nice addition to any potluck or barbeque over the warm summer months. As you can see from this post and my last one (HERE), this cookbook is filled with simple recipes that busy parents can make on a weeknight. This cookbook makes getting a healthy dinner on the table so easy that family dinner can happen several times a week.

Gastrokid Cookbook: Parmesan Chicken Cutlets

I recently received a copy of The Gastrokid Cookbook: Feeding a Foodie Family in a Fast-Food World to review. I was intrigued by this cookbook because it was written by two dads who also write their own blog, Gastrokid. Their idea is that all kids should be eating what their parents are eating and that it should help them broaden their palates, so-to-speak.

When looking through this book, I loved the simplicity of many of the recipes. They are not looking to increase your time in the kitchen, but rather increase your time with your family at the dinner table. That's something that is very important to me. The recipes include ingredients you can find at your local grocery store or farmer's market. The cuisines range from curry dishes to Asian flavors to traditional Shepard's Pie.

So, to put this cookbook to a test, I decided to make the Parmesan Chicken Cutlets - AFTER we got home from soccer practice. Now, if you have visited my kitchen on an evening after a practice or other activity, you will find me pulling out some "short-cuts" from the freezer and calling it dinner. I don't always jump into cooking when I walk in the door and the kids are complaining that they are starving.

I had to defrost the chicken, but that didn't take very long since they were smaller pieces anyway. While the chicken was being nuked into submission, I threw together the Parmesan and bread crumb mixture and whisked the egg. I was not sure that skipping the flour step would work well in this recipe or not, since nearly all breaded chicken recipes follow the formula: flour, egg, bread crumbs.

As you can see, the breading stayed on the chicken quite nicely. It created a nice crispy crust and cooked up very quickly since the chicken was sliced thin. Overall, it got a thumb's up from everyone at my dinner table! The best part was that I was able to get dinner on the table within about 30 minutes without question.

While this cookbook does not provide a photo for every recipe, they do provide a good number of color photos on recipes I may have passed by if I hadn't seen the photo. Anyone with children will find this cookbook appealing and the recipes accessible for even the busiest family.


Parmesan Chicken Cutlets
Source: The Gastrokid Cookbook

Ingredients
1 whole boneless skinless chicken breast (2 halves of 1 breast)
1 cup grated cheese
1 cup bread crumbs
1/4 cup chopped fresh parsley
salt
1 tablespoon fresh cracked black pepper
1 large egg
2 tablespoons butter
2 tablespoons olive oil

Directions
Cut the chicken breasts into two thin cutlets. Combine the Parmesan through pepper in a bowl. Mix it together, then spread on a plate (I kept it in a shallow bowl and that worked fine. Also didn't dirty another dish). In a separate bowl, beat the egg.

In a large skillet over medium heat, melt the butter and olive oil. Once the butter has foamed and subsided, the butter-oil is smoking, start cooking.

One at a time, dip the chicken into the egg, then dip in the bread crumbs and press to coat both sides. Carefully, place the chicken into the hot skillet and fry for several minutes on each side. Do not crowd the pan, and cook in batches if you need to. Set on paper towels to drain before serving.

Peanut Butter & Jelly Bars from Martha Stewart

This month's theme for Bunko was Back to School, and I immediately knew what I wanted to make - the Peanut Butter and Jelly Bars from Martha Stewart's Cookies Cookbook. I thought the bars would be a fun twist on the PB&J sandwiches that grace many lunchboxes with the return to school.

I don't know why I had put off making these for so long. They were so easy to put together, and I am thinking there are many other variations of this type of bar that can be made as well using other cookie dough flavors.

I combined two different jelly flavors for these bars - strawberry and raspberry. I didn't have enough of just one for the recipe so I thought the combination would be fun to try and it worked out beautifully.

These bars went over very well with the Bunko Babes and with My Oldest... he declared these the best treat ever (but, I do have to admit he says that quite often). My Youngest couldn't be bothered with these since they did not resemble a chocolate chip cookies - he's a purist when it comes to cookies and treats.

These bars would be such a fun treat to have waiting for the kids for an afterschool treat or even as a special surprise for a lunchtime dessert. They are sure to put a smile on their faces.
